I have always mistaken mousse for mouse.
Mousse should be pronounce as “moose”, not the little
rodent.
Anyway, I saw a Creamy Coffee Mousse displayed in a
bakery shop, while I was on the way to the supermarket to do some grocery shopping.
The picture of that coffee mousse kept lingering in my
mind, which means I just had t have it today at all cost.
Unfortunately I was unable to keep my promise as I had to
rush back home to prepare dinner.
Finally, after I had finished preparing dinner, I reached out
for my old recipe book, flip through the pages until I
caught sight of the Creamy Coffee Mousse I was looking
for.
I took out the ingredients, set of making it , chill it for
an hour before I indulge myself into this awesome
Creamy Coffee Mousse while my kids were asleep.
Honestly, this mousse ( not mouse ) is really, really
awesome, taste delicious like an ice-cream mix with jellies.
It is worth to try out to satisfy my addiction to mousse.
Afterall, I managed to make 6 cups of coffee mousse to
share with my kids in the morning.
Sure to be delighted!
Prepare time: 10 min
Chill time: 1-2 hours
Yield: 6 cups
l 1 tbsp powder gelatin
l 90ml very hot water
l 4 tsp instant coffee powder
l 4 tsp light brown sugar or muscovado sugar
l 3 tbsp hot water
l 240g natural fromage frais ( soft skimmed milk and cream)
l ½ tsp vanilla essence
l 2 egg whites
1 Sprinkle gelatin over hot water in a bowl.
2 Keep stirring until it dilutes.
3 Allow it to stand for 3min but keep stirring
occasionally (don’t freeze it)
4 Dissolve coffee and sugar in another bowl with 3 tbsp
boiling water.
5 Add in the fromage frais and vanilla essence.
6 Stir well.
7 Add in the cool gelatine liquid and mix again.
8 In a large bowl, whisk in egg whites until stiff
( use the cake mixer ).
9 Fold into the coffee mixture. Mix again.
10 Divide the coffee mixture into 6 cups ( small) .
11 Chill in fridge for 1-2 hours. Best still, overnight.
A gelatin powder is commonly sold in small
sachets in the supermarket under the baking
department.
It is a common gel substance that is used to
culinary purpose.
In Latin, “Gelatin” means “Frozen”.
Gelatin is made from the collagen of animal
such as pig skin.
It is colorless, odorless, brittle and dry powder
or thin film.
When gelatin is mixed with water, it forms a
thick texture that resembles thickening agent
of cornflour.
It turns into a formation of foam, thicken
paste.
Fromage Frais is usually sold in supermarket under the
butter and cheese department.
It is usually sold in tubs or cups, usually imported from
foreign countries.
It is a creamy soft cheese that is made with skimmed milk
and cream.
It is a less fat of cream cheese and suitable for making
yogurt, mousse, salads and ice-creams.
Makes delicious cold desserts for kids.

Any mousse is my favourite including pineapple. I have tried that and I have enjoyed it. Coffee mousse is the favourite of many but since I do not take coffee I miss it badly.

I think creamy coffee is made thus as I made at home to drink self when I am working all alone in my room sitting on my room chair before me some papers to write sonnets and odes and songs. It is my favorite drink and prefer creamy coffee to tea or black or milk coffee.
Take the instant coffee powder and sugar in a cup. Add a tsp of water or milk and mix the coffee powder and sugar. Whisk the mixture rigorously with the help of spoon until it becomes light brown in color and creamy. Heat the milk and let it comes to boil. Pour the hot milk into coffee cream we prepare earlier

I used to put tons of sugar and milk in my coffee. Yuck.
Now I prefer my coffee black, organic, brewed with a paper filter.
It’s better that way… much better, just takes a while to get used to it.
