Corn Chicken Fritters recipe

I grew to be a fanatic lover for deep fried food.

Actually, it is not a healthy option to consume too much 

of oily food but once in a blue moon should do no harm.

In Japan, fried food batter is often referred as “Tempura” but locally we called it “Fritters” or “Goreng” in Malay 

language.

Normally, fritters are deep fried with mixed tofu,

 mushrooms, prawns, chicken, pork slices, white fish,

 fruits and vegetables. 

 

Here in Malaysia, the most common fritters are:

# Banana Fritters

# Tapioca Fritters 

# Mushroom Fritters

# Jack fruit Fritters

# Sweet Potato Fritters

# Coconut Fritters

I am sick and tired of those oily fritters. 

I wanted to make my own homemade fritters which is

 rather different from the usual; Chicken & Corn Fritters.

Ever heard of it?

It is a combination of banana, chicken and corn kernels

 with chopped coriander dipped into the thick batter.

The Purpose

The main purpose for mixing 3 different ingredients is 

to produce more fiber to reduce constipation and coat

less batter. 

By coating less batter, this recipe does not absorb much 

oil. 

Next, after the fritters are cooked, remember to place 

them on kitchen paper towel to drain the oil from the

 fritters.

How to make a thick batter

In order to make a thick batter, you will need to mix these

 ingredients into a mixing bowl:

4 tbsp of corn flour

1 egg-beaten

1 tsp baking powder

Salt and pepper to taste

Plain water to bind the ingredients together into a thick

 batter.

It is suppose to turn out sticky, thick alike “White glue”

 

How to choose fresh chicken

1. Check the packaging and expiry date. 

Choose chicken fillets or keels that are packed on the same 

day as you are buying. 

The expiry date should expire 3 days later.

2. Choose pinkish chicken flesh. 

There shouldn’t be any blood nor skin attached to it.

 Avoid pale pink or greyish chicken meat.

3. Smell the chicken.

 You can smell the chicken freshness by putting your nose

 close to the plastic package.

 Foul odor means 4-5 days old chicken meat.

4. Use your index finger to poke onto the chicken flesh.

 It is supposed to bounce back not sink in , leaving a marking

. It should be firm not soft like jello.

 

What is cumin powder?

Cumin powder is ground cumin seeds that belonged to the

 parsley plant.

It is a herb seed that is often used in different cultures for

 cuisine , cooking purpose that brings out the fragrant herb

 flavor.

Here is the recipe for Corn & Chicken Fritters

Ingredients:

# 1 banana

# 1 egg

# 85g cooked chicken, finely chopped

# 200g sweet corn kernels

# 2 spring onions, chopped

# ½ tsp cumin powder

# 2 tsp chopped coriander

# salt and pepper to taste

# 86g plain flour

# some water 

Method of cooking:

1. Mash banana and mix in beaten egg.

2. Add in cooked chicken, sweet corn, spring onion, 

cumin, coriander, salt, pepper and mix well.

3. Add in plain flour and stir. If too dry and stiff, pour in a 

little water until form a soft batter.

4. Heat up wok or deep fryer with sufficient oil.

5. When the oil is hot, add in spoonfuls mixture for a few 

minutes until edges turn brown.

6. Flip over the other side, continue to cook until both

 sides are brownish and crispy.

7. Lift up cooked fritters and drain on kitchen paper towel 

or paper napkin to reduce excess oil.

8. Serve hot with dipping sauce such as mayonnaise, 

chillie sauce or relish.

9. Yield: 4 persons

    • I have never heard of a combination of chicken and banana. Corn flour binds and it is a right choice for making fritters. I have never tried chicken fritters. This is new to me. I will definitely try it. I love to cook and am happy that I have found something to add to my recipe book.

        Yes, corn makes a good fritter batter, crispy and fluffy, better than plain flour
        Chicken and corn mix with banana gives a sweet tasting flavor and good for bowel movement especially both corn and banana.

        if you don't like banana, you can opt it out.
