Today, we are going vegetarian for lunch at home.
This is the Vegetarian Chow Mien which I had just quickly cooked this afternoon for my family’s lunch.
Normally, Chow Mein, which is also known as Stir Fried Noodles, is mixed with chicken or pork fillets for meat consumers.
However, it is good to try vegetarian Chow Mien once in a month to cut down on meats.
Homecooked Chow Mien in just 20minutes, what other main course meal could beat this easy stir fry noodle recipe???
#1- yellow noodles
Most Chinese families prefer fresh yellow noodles sold in the wet market or hypermarket that yields 400g, almost sufficient to be consumed by 4 persons .
However, yellow noodles are oily which is the reason why you have to unpack it, toss the noodles into a bowl of water in order to remove the excess oil.
In addition, you will notice that the noodles leave yellowish solution in the water ( the coloring of the noodles).
Yellow noodles are usually thick and long strands which make this Chow Mien a very filling meal.
#2- Vegetables
This is a versatile dish. You can add in any type of leafy vegetables that you have in the fridge.
The common vegetables used are:
-Chives
-Cabbage
-Mustard Greens ( known as “Sawi “ by locals)
-Spinach
-Salad leaves ( iceberg or Romaine lettuce )
-bean sprouts ( known as “Tau geh” by the locals )
# 3-Eggs
I prefer to add beaten eggs into my Chow Mien in order to allow the yellow noodles to blend well with the beaten eggs.
This is different from scrambled eggs .
Adding scrambled eggs to the stir fry noodles give the different flavor to the dish.
It becomes the additional ingredients that is separate from the noodles.
However, if you add in beaten eggs into the stir fry Chow Mien, it makes the noodles it little sticky, you don’t have to add water anymore.
Then, you will notice that the dissorted white and egg yolks are stick to parts of the noodles, induce a “egg-noodle” flavor.
#4- Additional Ingredients
Vegetarian recipes are not difficult to cook at all.
There are a few additional ingredients that you can add into your Vegetarian Chow Mien which induce extra flavor and taste to the normal bland meal.
I would recommend you to try:
-dried mushrooms ( black or shiitake mushrooms-soaked and cut into strips)
-firm tofu or puff tofu ( cut into strips)
– carrots ( sticks)
-1 packet of fresh yellow noodles- briefly soak to remove the excess oil, drain
– 1 egg-beaten
-1 stalk of Mustard Green-cut into sections
– 1 medium onion-sliced
-2 clove garlic-chopped
-1 tbsp Vegetarian oyster sauce
-1 tbsp light soy sauce
-1 tsp dark black sauce
– white pepper
-1 stalk chopped spring onion
