When it comes to cookies, my mother has the “coffee nose” where she could sniff out what type of coffee beans are used to make coffee cookies.
Initially, I thought that coffee is made for hot beverages not to be used in baking or food preparation purpose.
Little did I know that coffee beans or powder gives a wonderful coffee flavor to cookies that even kids are allowed to consume them.
Mom used to say that cookie has caffeine which is too strong for kids to drink as beverage.
Too much caffeine could induce kids temperamental and irritating behavior which is why she refrain her grandchildren to drink coffee.
However, she was clever to add coffee powder (grind from fresh toasted coffee beans) into cookie batter , not too much just 1 tbsp would do to produce the fragrant smelling coffee flavor in this Coffee Walnut Cookies.
In addition, she had included some coarsely chopped toasted walnut for a crunchy and chewy bites that my kids loved very much.
This cookie is very easy to bake if you have some spare time on the weekends or while your kids are in school.

Brief Notes
The ingredients used in this Coffee Walnut Cookies are the basic:
Plain flour, butter, brown sugar, egg, vanilla essence, walnuts, freshly ground coffee powder and more raw walnuts for decoration purpose
If you do not have freshly ground coffee powder in hand, you could replace it with packed coffee powder ( the original black coffee).
However, try not to use those 3-in-1 coffee powder because it will produce different flavors to your cookies.
Some 3-in-1 coffee powder are mocha, latte, cappuccino flavor which are not suitable for baking purpose.
As for the butter, use unsalted butter, any brand will do but never use margarine which is high in fats and calories.
Sugar wise, I would recommend to use brown sugar for less calories and sweetness.
Otherwise, you could replace it with icing sugar .
You can make your very own icing sugar by blending the white coarse sugar in a food processor.
Walnut, buy those packed raw walnuts instead of pre-seasoned ones.
Place the raw walnuts in the oven, toast them for 10min, you will get crunchier and tasty walnuts.
Then, chop them into smaller pieces for your cookie batter.
My kids love the crunchy bites of the walnut pieces in the cookies and the fragrance smell of coffee was inviting too.
The texture of the cookies were chewy, crunchy bites and almost melt in the mouth that goes well with hot beverages.
Kids love cookies while drinking hot MILO or even dip in the cookies into the beverage alike grandmother’s habit.
Baking process took around 20min to bake 30 pieces of cookies but do remember to leave them in the oven even after the bell rings.
