You can easily satisfy hungry kids with simple meals such as fried rice, ramen noodles or sandwiches which are quick and easy to prepare in a jiffy.
Today, I was busy with visiting relatives for the Chinese New Year celebration that I had not enough time to thaw the frozen chicken nor wash the vegetables.
However, I was fortunate to have some leftover cooked chicken, a bag of mixed vegetables consisting of green peas and corn kernels.
In order to cook fried rice, you must remember that you have to use overnight cooked rice , doesn’t matter whether it is white rice or brown rice.
You see, overnight rice is brittle and lose, gives chewy bites compare to freshly cooked rice.
Overnight cooked rice isn’t sticky nor goey, not wet or damp and best of all, kids love Chicken Fried Rice.
Yes, use left over cooked chicken, without the skin , cut them into strips or tear them into shreds so that kids could chew them easily.
Most kids do not like thick slices of white chicken flesh because it is hard to chew and they would keep the chicken meat in their mouth for a long time.
Vegetables are wide in variety.
I prefer mixed vegetables that are sold in large packets, usually a mixture of 3 different type of vegetables:
Cubes of carrots
Green peas
Corn kernels
You can use all 3 of them or just use 2 as I did, green peas and corn kernels.
I had also added in another fibre packed vegetable; red pepper also known as red capcium.
Remove the seeds, cut them into small squares but you have to cook them thoroughly before serving the kids.
If your kids dislike spring onion, replace it with chopped chives or shreds of cabbages.
Bring in more vegetables into your fried rice to give your kids more nutrients and protein from the chicken meats.
Chicken Fried Rice Recipe
* 8oz left-over overnight brown rice
* 3 tbsp olive oil
* 1 egg
* 1 small onion- chopped
* 1 small red pepper, remove seeds and chopped
* 8oz cooked chicken- sliced
* 2oz green peas
* 2 oz corn kernels
* 3 tsp light soy sauce
* pepper to taste
* 1 stalk spring onion- chopped
How to prepare this dish:
Serve up to 4 persons

Our staple food (meaning it is what is always on the table to go with the viands) here in the Philippines is rice. I am not actually a rice person. I can only consume just 3/4 cup of it.
However, when it is fried, I really can eat a lot.
I haven't tried making fried rice with chicken strips. I think, with this recipe of yours, I will try it this weekend. It really seems delicious. Is that a picture of it or just from the net?
Oh, for sure, everybody in the house will love it, because when I cook fried rice and it is a lot, there will be nothing left from the big pan after the meal.

I love to fry rice when there are spare rice or overnight rice, but I don't cook rice very often during lunch time, thus I have to cook the rice for frying purpose and keep it overnight for the next day.
The kids love to order fried rice when eating out too, I think this dish can make them full and just easy to be eaten.
