Best Chicken Rice: Hainanese Chicken Rice

Chicken Rice which is locally known as “Ji Fan “ or “Sau Ji Fan” is a very popular main course meal that consist of roast chicken with steamed chicken rice and slices of cucumbers.

 

There are 2 types of Chicken Rice sold in the restaurant; mainly:

 

– Roast chicken

-Hainanese chicken ( white Chicken)

 

Roast chicken flesh is tender soft with roasted brownish crispy a bit salty skin ( attached to the chicken fats ) that most consumers loved best.

The only disadvantage is the roasted skin is quite oily, high in cholesterol and calories but extremely delicious!

 

 

Hainanese chicken is also fondly known as White Chicken ( Bai Ji ) which the flesh is also tenderly soft with white original chicken skin color.

The skin is boiled in large amount of water until it is so soft alike silken tofu without oil which is much suitable for weight watchers.

It is lower in cholesterol, lower in calories and less oil compare to roast chicken.

Hence, it is less salty which is the reason why it is not highly sought in the market.

 

You could rarely see Chicken Rice stall selling Hainanese Chicken Rice ( known as Bai Zhang Ji or Hainan Ji Fan in Chinese ) because it is not flavorable or tasty as Roast Chicken Rice.

 

However in this post, I would strongly recommend you to try Hainanese Chicken Rice instead of Roast Chicken Rice for healthier eating purpose.

 

Although the taste of Roast Chicken Rice is so addictive and filling for lunch or dinner that the popularity of the chicken dish is almost found any corner of the street in Malaysia, Singapore, Taiwan, China, where most Chinese community are located in the world, Hainanese Chicken is widely sought by ladies, weight watchers and elderly folks due to its benefits; less in fats and cholesterol.

 

The Hainanese Chicken is served is fragrant rice which is cooked with the fats and essence (juice) dropped from the roast chicken.

 

However, this method of cooking the rice is not a healthy option due to the fats involved.

 

Instead , use water, chicken stock cube, mixed with chopped ginger and garlic to enhance the flavor of the plain rice into Fragrant Chicken Rice.

 

You can choose which part of the steamed chicken you wanted for your meal; chicken wings, drumsticks, breast or any parts when you dine out at the roadside stall, food court of Chicken Rice shop.

 

It is often serve with side dish such as blanched Pak choy with crispy garlic, braised eggs, braised tofu, chicken livers, Handmade Garlic Chillie Sauce and Slices of cucumber with spring onions or Chinese celery as the light salad.

Hainanese Chicken Rice must drizzle with the special sauce mixture which is a combination of black sauce, light soy sauce and sesame oil to enhance the flavor of the roast chicken.

 

 

Here is the recipe how to make Hainanese Chicken Rice

Ingredients

-1 chicken- cleaned

– 2 tsp sesame oil

-1 tsp light soy sauce

-1 cube chicken stock ( Knorr)

-2 cups of rice

-4 cloves garlic

For sauce:

 

– 5 red chillies

-3 cm ginger-chopped

-1 tbsp tomato sauce

-1 tbsp white vinegar

-1 clove garlic

 

Cooking steps

  • Boil enough water to cover the whole chicken in a alrage pot. Put in the chicken, lower the heat and cook the chicken covered for 10 min. Turn off the heat and elave the chicken in the water for another 40min.
  • Remove the chicken and put it in cold water for 15min.
  • Hang the chicken dry and brush it with 1tsp of sesame oil mixed with 1 tsp light soy sauce.
  • Cut off the chicken legs ( if you are not eating them), wing tips and neck and put them back into the water to boil. Add chicken cube. This is to allow the soup base to blend in the original chicken essence.

 

 

How to cook the Fragrant Chicken Rice

 

  • Heat up wok with 1 tbsp of oil. Fry the chopped garlic until fragrant.
  • Wash rice as usual, put the cleaned rice into the Rice Cooker pot with sufficient water.
  • Toss in chicken cube, pepper, fried garlic, sesame oil and stir well.
  • Press “COOK” until the rice is cook.

 

 

 

 

How to prepare the chillie sauce

 

  • To make the chilli sauce, deseed the chillies, pound them together with garlic and ginger into fine paste.
  • Heeat up wok with 1 tbsp of oil, stir fry pounded chilli paste under the lowest heat in order not to burn it.
  • Add in a little salt, 1 tsp sugar, tomato sauce, vinegar and sesame oil with a little water.
  • Simmer until chilli sauce blended well.

 

 

Tips

 

To serve the Hainanese Chicken Rice into individual plates, cut the chicken into reasonable slices, served with the fragrant chicken rice, chilli saue and a bowl of the chicken stock from the boiled chicken.

Garnish with crispy shallots and chopped spring onions.
