Little knowledge is dangerous they say. This could be said about gelatin. The uses of gelatin in our recipes be they deserts, pies, appetizers, salads, jams and jellies is a known fact. I am so happy when kids get to eat gelatin as most like jelly beans.
I mostly use gelatin in sweet dishes and candies. I have tried my hand at making jujips, marsh mallows, mousses, and jellies. The only item I found difficult was making marshmallows.

We had a good crop of guavas in our garden some time ago. I used the ripe guavas in making fruit jelly. After removing the seeds, I made a pulp of the fruit. I soaked gelatine strips in a bit of water and then cooked it with enough water and sugar. I added the fruit pulp when the gelatin mixture had cooled a bit but not hardened. I whipped the whole thing and kept it in the refrigerator By evening I had the most exotic fruit jelly – jelly made from our own guavas.
Fruit jelly could be made from any fruit using the recipe above.
Gelatin is in my diet and that explains why my nails do not break that easily. They grow pretty fast as well.
Come Christmas I get charged to try out jujips but must admit I am not successful every time I try them. The sugar that is used to roll the jujips in tend to melt. I have not given up. I shall keep trying till I succeed.
Pineapple soufflé is a great dessert to try out. I have been quite successful here. What it requires is a proper blend and adding ingredients at the right time.

I do not like gelatin because its made by boiling animal bones and tissues I think it is dangerous for health and heart but I have seen most of the children and people eat it with keen interest and eagerly at home and out of home.
