Yesterday, our gas tank got empty, so I could not cook using the open-flame gas stove. I have no problem cooking rice because I use an electric rice cooker, but for the viand or side dish, I do not have an electric stove.
So the solution? I thought of the portable oven which gathered some dust in our storage are. It had been standing there for so long, unused because I lost my “passion” for baking some simple cakes for my family.
Suddenly, that “passion” got ignited again when I took the oven out. We went to the grocery late in the afternoon yesterday, then we bought some ready-to-bake cakes. They are the ones in a box, complete with all the ingredients, or are already mixed; and with the chocolate sprinkles in one small plastic sachet.
What I did was add an egg, and very little water. I set the oven on the prescribed temperature and time for baking. After a while, we had that instant chocolate cake! The problem was my husband and I could not eat it; we just tasted a very small bit of it for fear that our sugar levels will rise!
I do not have much problem about my blood sugar, but my husband does. So I decided to bake a “healthy” cake for the two of us. It was good I bought an all-purpose flour, then I added three eggs, some baking soda, cream, water and grated carrot. Instead of adding sugar, I used stevia, a natural sweetener from stevia plant which is said to be good alternative for sugar.
After some minutes, we had our own version of a carrot cake! We were not afraid to eat it because it is healthy; and with more fiber from carrots. Next time I will add some nuts like walnut or almond to make it more enjoyable to eat.
I guess children would love it too! instead of the usual very sweet chocolate cake, they can enjoy this alternative cake! I do not like to use synthetic sweeteners due to negative reviews about them. For us, stevia is the best one because it is natural.
With this revived passion for baking, I can cook cookies or simple cakes for our siblings and relatives when they have important occasions in their homes. It is a nice gift, a labor of love!

Long ago, I tried baking. For 3 times, the cakes failed to be what it should be From then on, I never tried.
But reading your post, may I ask if those ready to bake cakes can be cooked through an oven toaster. And I suppose they are just small cakes.
You see, before I also was able to bake a banana cake using the oven toaster and I also used the easy to bake mixtures found in supermarket. I was happy to be able to make a banana cake.
So now, I would like to ask if what you used here are those "instant" mixtures for cakes that can be cooked in an oven toaster. I also would like to try.
I don't like complicated ways of doing cakes that's why.
