Bacon and dried shrimp hash brown

Whenever I have breakfast at McD, I never miss out Hash Brown for sure.

Crispy Hash Brown, hot and steamy, when I tear it into halves, ohhh, you can see the steam oozing out.

Hot and delicious!

Hence, I decided to try my hands on this new recipe, Bacon and Dried Shrimp Has Brown instead of the regular.

Now honestly, I had never made this potato recipe before.

Quite surprisingly, it was extremely easy to prepare, cooked in minutes with butter instead of oil!

Furthermore, it is eggless!

 

How to prepare Bacon and Dried Shrimp Hash Brown

However, I did used slices of bacon and dried shrimps to give the extra filling and mild salty, just taste GREAT!

Dried shrimps are sold dried and the stench is strong, super salty.

Soak 1 tsp of dried shrimps into a bowl of water for a few minutes, not too long.

It will lose the salty flavor if soaked too long.

 

Although I am not a vegetarian, I refrain from using egg because it will loosen the mashed potatoes, might as well use butter to stick the potato together.

You can replace bacon with minced meat ( chicken or pork) or simply leave it out, make it into a vegetarian hash brown instead!

As for the potatoes, I used USA potatoes because the texture is softer than Holland potatoes.

Oh yes, remember , don’t peel off the potatoes skin.

Remember, the skin is high in fiber and potassium which are nutritious for your body.

Never expect that it has fiber to reduce constipation and potassium for lower blood pressure, protects you from cardiovascular diseases ( heart attack ,stroke, high blood pressure.

 

How to make mash potatoes

Firstly, in order to make hash brown, you need to make mash potatoes.

You can either slice them and deep fried before mash them with the back of a fork.

However, I prefer the healthier method, boil the potatoes, mash them into soft, squisy texture, able to round it up easily.

  1.  boil half pot of water
  2. scrub the skin of the potatoes, make sure they are clean, no dirt, sand, shoots,etc.
  3. cut each potato into halves
  4. toss them into the pot of boiling water
  5. let them simmer for 10-15minutes.
  6. Use a fork to poke each of them.
  7. if soft, easily poke into the flesh, you can remove them now

 

How to cook Bacon and Dried Shrimp Hash Brown

 

Ingredients

3 large USA potatoes- boiled as above instructions.

3 slices of cooked bacon/ham-diced

1/2 large onion- diced

1 tsp dried shrimps- soaked and minced

 

 

Seasoning

salt and pepper to tast

1 -2 tbsp butter

Method

  1. Mash the potatoes with the back of the fork.
  2. Season with salt and pepper to taste
  3. Heat up wok with 1 tbsp of butter
  4. Saute bacon, onion, dried shrimps over low heat.
  5. Remove, add into the mashed potatoes
  6. Shape the potatoes into small round patties, lightly flatten them
  7. Coat a little bit flour on both sides
  8. Fry in a frying pan with 2 tbsp of butter until both sides are brownish.
  9. Serve hot with mayonnaise, mustard or chilli sauce
