HOW DID I KNOW ABOUT IT?
During my tour to Sabarimala, I could get an opportunity to taste Avial. This is really good totally different from the one that is prepared in Andhra Pradesh. The taste is somewhat sweet and sour with many vegetables found in it. I know this dish and tasted it long back when mother prepared it some 20 years back in the house. This is after a gap of 20 years I have tasted this dish.
Avial is the favorite dish of Kerala. The dish is prepared using almost all vegetables like drumsticks, pumpkin, carrots, beans, cabbage (in less quantity), potatoes, Tomatoes etc., The uniqueness of the dish is that it is made of Coconut oil. This oil is used very generously. As most of the Kerala state is known for the Coconut crop, Coconuts are available for easily in the state and making the best use of the available coconut is almost the reason for the birth of this unique and tasty dish. By preferring this dish one can easily say ‘Big No’ to the remaining items like Rasam, Curry, Sambar etc., as the dish is a complete bowl of all vegetables.

But, in Kerala Avial carrot and beans are not used in the preparation of the dish. They are used in the states of Tamilnadu and Karnataka. In some states, this is prepared using Curd. Adding curd gives a very peculiar taste to Avial.
In Kerala, the dish is prepared using coconut in rich quantity and refined coconut oil which is the main ingredient The dish is served hot and should be taken with rice. This is the best stuff that can replace Sambar, Dal, and Rasam all in a row. One can not have a satisfaction with the taste of the dish just with one serving. Once the dish is tasted you will ask for a second serving. The curry leaves used in the dish give good smell and add flavor to the dish.
The interesting part of this dish is that there is no need to use any side dish for Avial and can be consumed even without rice. But, sometimes it is preferred along with Rotis

This sounds so nutritious and the foods are colored to mean they contain natural chemicals the prevent cancer.I have eaten all these veggies, so tasty. I prefer to fry them in slow fire and very little olive cooking oil.
You reminded me of my visit to Kerela 2 years back. There is tasted a traditional Kerela. There I ordered a traditional India Thali(platter) and it was then I tasted Avial.
It had a peculiar taste and essence. I loved every bite of it. Though there were many elements which I did not know at that time but now after reading your blog i can relate to them very well.
I also recall a peculiar kind of rice which was very small but extremely thick. Though I did not like it a lot but it was also something different I saw for the first time.
Another nutritious and healthy dish. And the way these are prepared traditionally serve great purpose for the people living in these places.
