Apple Crumble Cake in Rice Cooker

Here is the most delciious Apple Crumble Cake that I had ever baked!

 

Recently, there was an offer for Royal Gala apples at Tesco and I just had to buy a few packets from the shelves because I could save at least 20% from the normal price.

An Apple a day, keeps the doctor away

 

This proverb did make sense.

My kids had 2 apples per day, cut apples without skin as they find it hard to chew off the skin.

As for the remainder apples, I had decided to try my hands on Apple Crumble Cake which my friends at Facebook had recommended.

I have to admit that this apple cake turned out super moist, fine texture with lots of crumbs that my kids and I loved most.

 

How to prepare Apple Crumble Cake

The basic ingredients used are similar to any butter cake recipe.

You will need:

  • 1lb ( 480g) of fresh apples ( you can choose green apples or Royal Gala red apples)
  • Butter or margarine ( unsalted would be better )
  • brown sugar ( not white sugar because the apples itself are sweet- try to reduce the sugar intake)
  • Self raising flour- there are 2 types of flour required; white self raising flour (the normal type) and wholemeal self raising flour ( for more nutrients)
  • sultanas or raisins or prunes ( without seeds)
  • demerara sugar ( not brown sugar)- for top surface crumbles
  • ground cinnamon- to bring our the spice in your apple cake

All these ingredients are sold in supermarket. Choose local made products. You don’t to spend extra money on foreign import goods. Local ingredients taste as good as foreign ones. I try to save money , buy local products.

Apple Crumble Cake

Ingredients

  • 120g ( 4oz) butter
  • 120g (4oz) brown sugar-soft and refined
  • 120g (4oz) SR flour ( white-normal)
  • 120g (4oz) wholemeal SR flour
  • 1 egg Grade A – beaten
  • 480g ( 1lb) Royal Gala red apples-peeled, cored and sliced
  • 120g (4oz) sultanas ( no seeds)
  • 1/2 tsp ground cinnamon powder
  • 30g ( 1oz) demerara sugar

Baking steps to make Apple Crumble Cake

  1. Preheat oven to 190C or Gas Mark 5
  2. Grease rice cooker pot with a little butter on the base. Line in with baking paper.
  3. In a big mixing bowl, beat the remainder butter with brown sugar and creamy.
  4. Beat in the egg.
  5. Sieve in both self raising flour. Mix well.
  6. It will form a stiff dough.
  7. Pour in 2/3 of this cake batter into the rice cooker pot. Press down.
  8. In another bowl, mix in apples, sultanas, demerara sugar and ground cinnamon. Mix well.
  9. Spread these crumbs mixtures into an even layer on top of the cake dough.
  10. Spread the remainder cake dough on top of the crumbs.
  11. The surface will be uneven, it’s alright.
  12. Place the rice cooker pot with the Apple Crumble Cake dough into the rice cooker.
  13. Press “COOK” to bake the cake for 50 minutes.
  14. Do not open the lid of the rice cooker until it is done.
  15. Turn off the power.
  16. Shake the rice cooker pot to loosen the cake.
  17. Place a flat plate over the pot. Turn upside down quickly.
  18. The cake is on the plate now. Allow to cool before cutting it.

 

Yield: 16 pieces- 4 persons

Ready in: 1 hour and 15 minutes

 

What is demerara sugar

Demerara sugar is NOT BROWN SUGAR.

It is refined white sugar made from sugar cane, crystallize into raw sugar.

It is light brown in color because the sugar is soaked with molasses.

      I have yet to come across a recipe where cakes are pressure cooked.

    • Okay I am also applauding you for the some very good blogs. And the many good recipes that you share are really good. I like the way you give us evry step from the ingredients and the method to the end. Now for the pressure cooker baking that's a first never heard of it this is a first and it sounds very promising. The cake looks moist and fluffy inside, I don't eat Apple's as often as i should because I don't like them, but I would take the time and try to bake this cake and see how it goes. It actually looks yummy and because I have a sweet tooth I wouldn't mind.
