Southern Style Breaded Chicken for 2

Today, my working teenager had brought us to the local Western restaurant to have a brunch since we woke up late.

 

Hitting two meals at one go, brunch was the best way to settle breakfast and lunch at the promotion time.

 

Let me introduce you my set of brunch that I had ordered; Southern Style Breaded Chicken which was fulfilling and super tasty.

 

This chicken recipe is suitable for Christmas Day dinner or Thanksgiving dinner too.

 

I was afraid that this set of brunch wasn’t sufficient to fulfill my hunger pangs but surprisingly with my huge appetite, this chicken recipe had managed to satisfied my hunger pangs with contentment.

 

After checking out the contents in the Southern Style Breaded Chicken meal, I managed to figure out how to cook this meal with an easy way out.

 

 

How to prepare

 

You will need to buy chicken breast and remove the bones manually.

Alternatively, you can buy chicken fillets or chicken keel which do not have any bones at all.

 

Coat the chicken with fritter batter. Look at the below recipe how to prepare the batter.

 

Remember that you need to mix the batter well, supposed to be creamy and thick in order to coat the chicken meat.

 

Then use the breadcrumbs or instant oats to coat the chicken meat before deep frying.

 

You can also use the baking method to bake the breaded chicken in the oven.

 

This is a healthier version of making this chicken dish but it will take a longer time, approximately 45min to bake them while deep frying takes 15-20min.

Serves : 2 persons

Ingredients:

  • 2x 2 slices of chicken breast without bones and skin
  • 1oz (30g) plain flour for coating
  • 1 egg (beaten)
  • 2oz (60g) breadcrumbs or oats
  • 1 tsp olive oil
  • 2 medium size bananas-sliced into halves
  • Salt and pepper to taste

 

 

Sweetcorn patties:

Ingredients:

  • 2oz (60g) plain flour
  • 1 egg-beaten
  • 4 tbsp fresh milk ( or 2 tbsp powdered milk mix with 4tbsp warm water)
  • 3oz (90g) corn kernels from the can
  • 2 tsp olive oil
  • Some lettuce and tomato slices

 

 

 Method:

  • Heat up wok with sufficient oil.
  • Rinse the chicken breast, use the back of a kitchen knife to smack onto the meat in order to loosen the tendons.
  • In a mixing bowl, add in plain flour, salt and pepper.
  • Add in the beaten egg and olive oil, mix well the fritter batter.
  • Dip in the chicken breast into the batter, coat both sides well.
  • Then, coat the chicken breast with breadcrumbs thickly.
  • Deep fry the chicken breast for 15min-20min, alternative time, flip to the uncooked side.
  • Once both sides are brownish and crispy, remove from heat, place onto a kitchen paper towel in order to absorb excess oil.

 

 

Method to make sweetcorn patties:

  • In a bowl, pour in flour, egg, milk and whisk until well blended with no lumps.
  • Add in the sweet corn kernels, beat again.
  • Heat up a frying pan with olive oil, drop in a ladle of sweetcorn batter into the pan, fry until the edges turn brownish.
  • Flip over to the other side, allow to cook until brownish again.
  • You can make around 6 sweetcorn patties.

 

How to serve

 

On 2 serving flat plates, place each plate, 2 slices of bananas, 2 slices of tomatoes, 1 leaf of lettuce, 3 sweetcorn patties, 1 crispy breaded chicken breast.

 

You can compliment with mustard or mayonnaise or chillie sauce for dipping the chicken breast.

Alternatively, you can add in side meal such as muffins, fresh fruit or vegetable salads or mashed potato
