I had often seen bakery shops selling lovely, soft and spongy Madeleines.
Little did I know that Madeleines is a French butter cake that is often baked for teatime snack , which is one of the well known sweet delicacies to enjoy.
This butter cake is alike cupcakes but you need to use Madeeleines mould to form beautiful seashell shapes.
You can buy these moulds at Amazon or Ebay when there is an offer.
Otherwise, you could buy similar shape moulds at baking shops or shopping centre.
Paper cups may not turn out well but you can try them out if you are out of options.
Use butter, not margarine because it is less oily and gives the buttery flavor.
Cream the butter with sugar with a stainless steel fork. You don’t have to use a cake mixer because over beating the batter would make the middle texture sink in.
Alternatively, you could replace castor sugar with brown sugar, an extra 50g since brown sugar isn’t sweet by nature.
However, brown sugar is much healthier for kids, reduce diabetes problem.
Lemon juice is required for madeleines, it is one of the main ingredients that makes this French butter cake extra special.
However, do not fill the batter to the brim of the seashell shape moulds.
They will over flow during baking time.
So, just fill up to 2/3 full will do.
The recipe given here is sufficient to make approximately 12 pieces of Madeleines.
However, if you intend to make double the amount, you might as well prepare the batter twice the amount at one shot.
You will need to keep glazing a little butter on the inner moulds, each time before you pour in the batter.
Traditional Madeleines flavor is lemon scented. Freshly squeezed lemon juice is far much better and tastier than artificial lemon essence.
There are other flavors in the market too, such as , rose, lavendar, orange and vanilla essence but don’t mix lemon juice into it.

We have restaurants here in America by that name and they are French. But I never knew it was the name of a cake. I also didn't know the cakes came in “flavors”. Sharing this. :)
Madelaine, I remember the this food in the movie of Jason Statham which I forgot the title, I think its Transporter. I love the taste of this bread and we have also the version of this in our region. Homemade is I prefer of this bread and I think the method above is really nice to follow in making some.
