I could never cook pinto beans right, they never were delicious. I went to a potluck meal one night and as one of my selections of all the food, I choose pinto beans. They were so yummy, I asked around to see who brought them and then I learn the secret to cooking the best pot of pinto beans.
First you will need a crockpot or a slow cookers. Yes that is the secret, delicious every time, can’t mess them up! I prefer to soak the bean all night, but don’t fear if you forget they will be just as good, but will need to cook longer. Make sure you pick the beans and get any trash out of them, bad beans and chunks of dirt!
After soaking, I drain them and place in crockpot or slow cookers. Add cold water to cover beans and about an inch more. You will need to check later they may need more water, if so add only hot water. If you like more juice add more water, but because of slow cooking it does not evaporate quickly. I also chunk in a slab of salt pork you may use bacon or ham bone. The ham bone is yummy, just make sure you have a big pan of cornbread to go with them.
You may cook on high or low. If I have all day I cook on low, if I need sooner I use high. About 4 or so hours on high and 8 to 10 on low. It will depend on your beans some cook up quicker. I do not add salt until the beans are done.

You seem lover of cooking.Only few are gifted in this kind of process. From the photo of the menu you presented here,I feel the sudden hunger hehehehe, yes I am so hungry now , but my food is not like this with meat, bans and other stuffs that add joy to eating. If I was going to live in Texas, I needed to learn how to cook beans. :) One day I used a slow cooker. It was a miracle! :)
