Soya an alternative to meat

Why Soya?

For those who are regular meat eaters and want to give it up for reasons that it is cruelty to animals or it is rich in fats, soya is a better alternative. Unlike meat, soya is rich in carbohydrates and other nutrients which is discussed below.  Vegetarians have soya in their regular diet.

Soya is a commercial crop and it is hardly grown in kitchen gardens. 

Soya is best eaten in the form of chunks and powder. Soya chunks and powder is the residue that is got after extracting soya oil. 

Soya chunks and soya powder are super ingredients in recipes. The chunks are boiled in hot water for half an hour or so . The water is drained out and these chunks could be either eaten plain after they are cooked using standard norms, with some garnishing such as a sauce or used in other recipes. 

The powdered soya is used in soups and other gravies. 

Several recipes are doing the rounds. Here is one

 

 Soya chunks curry

Soya chunks need to be kept in boiling water for about half an hour. Squeeze out the water and pour cold water and squeeze out the water again. Repeat this process a couple of times with the cold water. 

-Heat oil in a pan and add a spoon each of cumin seed and mustard seeds. Let them splutter. Then add chopped onions and green chillies. Fry till the onion turns golden brown. Add ginger garlic paste and fry for a while.

-Grind tomatoes and coconut to a  finepaste. Add this to the splutter and fry till water leaves the sides.  

-Add water enough for a gravy. Add the squeezed out soya chunks. Cook till done. 

This gravy could be eaten with rice, bread or chapattis.
