Creamy Beetroot Tortellini Pasta recipe

I am a huge fan of tortellini pasta but never have the guts to make one from scratch. Good thing for me, there is a lot of good and reasonably-priced tortellini packets that I can easily buy from the grocery shelves. So I only need to buy one pack and think what kind of sauce to cook with it.
Last night was no exception. I went to the grocery and bought this packet of ready-made tortellini pasta filled with pancetta and ricotta. I bought it before and it was really tasty and a good change from our usual viand and rice dinners. I also thought I will make a creamy/milky sauce with some grated beetroot instead of the typical burnt butter sauce to change. And the verdict? I loved it! Mind you that I am not a huge fan of beetroot (I find it too Earthy) but the saltiness of the pancetta from the tortellini plus the creaminess of the milk toned it down.
This recipe calls for one packet (usually 250g) of ready-made pancetta and ricotta tortellini, which is just enough to serve two people (in my opinion).


Recipe:
1 pack of ready-made tortellini pasta (pancetta and ricotta-filled)
25 g butter
1/4 cup milk (I used evaporated milk for this)
1 small roasted beetroot, grated
1 small onion, chopped
grated Parmesan cheese, garnish

Steps:
Boil some water to cook the tortellini. As soon as the tortellini starts to float, remove from heat, drain, and set aside.
In another saucepan, place over medium heat and place the butter. Wait for it to melt and once the sizzling sound stops, saute the chopped onions. Toss and cook until translucent.
Add the grated beetroot and cook for about a minute. Pour in the milk and wait for it to almost boil. When the milk starts to bubble, add the cooked tortellini and stir to cover everything with the milky sauce.
Remove from heat and serve. Add some grated Parmesan for added flavor.

    • this looks like a good pasta recipe for weekends.
      I had never seen reddish type.
      The beetroot color sure had blended well with this pasta.
      I think it would make a nutritious meal for the whole family.

      • Oh it became red because of the beetroot :) Yeah, it's a nice way to eat something healthier and I thought it would be good for us to have it mixed with pasta. It's also a nice change from the typical pasta sauces I make.

    • @cessy08 This is new to me as here in India we have a different cuisine but I have added quite a few of the dishes that belong to other cultures.
      Can this be a breakfast item too?

      • Oh, I won't personally eat it for breakfast and I bet the Italians will get mad at you, LOL (kidding!). It is a form of pasta so I think to eat it for lunch or dinner is good. Well, if you are used to having a heavy breakfast, then it might be alright, too?

          • LOL! I think some Italians can be forgiving. But I have a friend who really sticks to her Italian roots and tradition no matter what!

            • @cessy08 With a global exposure thanks to the Internet there is no limit of the changes that people make in their cuisine. I am one such.

    • I love tortellini and beets, so I am really keen to try this recipe! I will have to see if maybe I can locate the pancetta and ricotta tortellini. I don't think I've ever seen these on offer in our grocery stores.

      Pancetta, sadly, is very difficult to get where I live now. And what I can get is nothing like the lovely, peppery stuff I used to buy in Montreal! It would be fun if the tortellini filling tasted like the pancetta I'm used to....

      • Oh, that's too bad. Do you have M&S over there? When we are craving for cured meat (especially for Italian cured meats) that's where we buy it from. The price is not so bad as well and they go on special when nearing BBE - so there are times we wait for that, too :)

        • We're in a very small town with a small city nearby. No M&S anywhere close by, that I'm aware of. Probably it would be in one of the bigger cities, that are 4-7 hours' drive from us.

          We have a man here who is from Germany and learned to make sausages and smoked deli meats from his father back home. There are lots of great meats in his shop, but no pancetta. I've asked there if he would carry it, but the staff say no :(

          • Aw, that's too bad :( But come to think about it, if you have that quick access to authentic German sausages, then it is not too bad! To be honest, we are always craving for German sausages charcoal grilled during Oktoberfest. And I wish we have somebody here who can easily make it for us, too!

            • Yes, it's just glorious to go into his shop! We enjoy many other lovely sausages and cold cuts. Just not pancetta!

    • @ruby3881: Oh, I can imagine! I'd love to visit a shop for cured meats and deli. I'd probably end up with a lot of stuff I won't even manage to finish but, what the heck, I love food! :)

    • @bestwriter: Oh, you have to meet our Italian friend to know, LOL! Even with babies around and such, she sticks to her Italian time for dinner - which is at 8PM!
