This month of July weather is quite weird, sometimes
rainy days, sometimes hot days that I could dive into
a swimming pool!
In this article, you may find 2 of my favorite comfort
soups that warms up cold weather or when you do not
have appetite to eat anything.
Soups are comfort food that is simple and quick to
prepare and you could make large batches for
weekends soup of the day.
My favorite comforting soups are :
These soups are nutritious , comforting and enlighten
my appetite even when I am sick or when I wanted
light and easy meal when the weather is hot or cold.
Soups are wonderful source of fluids that replenish our
body water that had been ridden through sweats and
urination.
Instead of drinking carbonated drinks or caffeine
beverages, replace your fluids with these comforting
soups which are nutritious, healthy and filling.
You could add in fresh noodles or egg noodles into
these soups if you wanted to turn them into noodle
soups for your main course meal.
Here are 2 of my favorite comforting soups you should
try today.
Watercress is often used as part of the ingredient in
salad making but it is rich I vitamin A, C and E plus
iodine.
It is extremely beneficial for those people who have
thyroid deficiency and digestive system infections.
In addition, watercress is high in soluble fibre which is
essential for smooth bowel movements, reducing
constipation especially for school age children and
working adults who lacked in consuming plain water.
l 1 bunch of watercress, separate leaves from stems.
l 100g chicken / pork meat – minced
l 1 tsp light soy sauce
l 1 tsp oyster sauce
l Pepper to taste
l 1 block soft tofu – cut into large cubes
l 1 cube chicken stock ( or 2 tbsp granules )
Bring 1/2 pot of water to boil in a soup pot
When the water started to form bubbles, add in
watercress leaves only.
Marinate chicken minced meat with light soy sauce,
oyster sauce and pepper.
Use your fingertips to form it into a small marble and
toss them into the soup, one at a time.
Use a soup ladle to stir lightly the ingredients.
Then add in the chicken stock and let the soup simmer
under low heat.
When the minced meat started to float to the surface
of the soup, add in tofu cubes
Turn off heat immediately.
Tofu doesn’t need to cook long.
Serve individual small soup bowl.
Garnish with chopped spring onions and sprinkle with
pepper before serving
Yield: 3-4 persons
This is one of the famous soup recipe in the world,
Minestrone which gives you the basic stock used for any kind of soups.
Sometimes, I would intentionally make huge batches
so that I could freeze the remainder soup base for
weekends soup of the day.
This is a super delicious and nutritious soup in a bowl.
Adding different vegetables into this traditional Italian
soup, makes everyone feel happy with the colorful
combination.
Eat well and stay healthy.
l 1 large red onion- peeled and cut into quarters
l 2 clove garlic- peeled and sliced
l 2 tbsp of butter
l 1 stick celery-washed and finely chopped
l 1 medium carrot- peeled and slice thickly
l 1 red pepper- remove seeds and cut into cubes
l 1 can of tomato paste
l 8 baby potatoes-peeled and cut into cubes
l 1 small parsnip- peeled and slice thickly
l 1 can of button mushrooms-
discard water, slice mushrooms thickly
l Freshly grated Parmesan cheese- 4 tbsp for
garnishing
l Croutons or toast garlic bread- for dipping
l Fresh parsley- 1 stalk- chopped
l 1 litre water
Bring a saucepan to heat with 2 tbsp of butter.
Saute onion and garlic until fragrant.
Add in celery, carrot,parsnip and red pepper, stir fry for
3 minutes.
Add in water, toss in the potatoes and simmer for
another 20 min.
When the potatoes are almost tender ( use fork to
poke them), add in the mushrooms and tomato paste.
Stir until the tomato paste is diluted.
Allow the soup to simmer another 5 minutes.
Turn off heat.
Serve in small soup bowls, garnish with parsley and
scatter Parmesan Cheese before serving.
Offer toast garlic bread or croutons for dipping.
Serve : 3-4 person

These are both delicious sounding soup recipes! I love to make minestrone and in fact, you've made me realize that I have the ingredients in my fridge that need to be used up soon! I ought to add it to my menu plan for the next week. We've got so many lovely vegetables right now, and I find I'm making lots of soup!

It is really nice to have some hot soup in my city. I think these two recipe soup you've shared will another way of experimenting in the kitchen. My mom does all the cooking and I was thinking to do a new soup for her to appreciate.
This cold season is the best time to have soup most especially in the morning.
That watercress soup is one of my favorite soup. I love the taste. Whenever there is watercress at home, we cooked it as a soup.
