The Bible shows that one of God’s creature named “Satan” tried to destroy God’s plan in the garden of eden.

“Satan” tempted our great grand parent to follow him and they stay away from God. He told them that God denied them the right to decide between the right and evil. Unknowingly, they followed him and stayed away from God. The result for that was death as God had warned them before.
They lost the chance of living forever and ever in paradise on earth.
Genesis2:17,3:1-6,5:5.

The sin of Adam and Eve covered the whole world and the Bible clarifies it in Romans5:12.

Back to the question, why do we die?
We die because we inherited the sin and death from our parents Adam and Eve but it’s not God’s willing and plans that we could not understand.
