Cookery: Saag 'N' Khumbi With Makki Ki Roti

INGREDIENTS 750 gm sarson saag 150 gm bathua saag 100 gm radish leaves 7-8 green chillis 250 gm onions 250 gm tomatoes 50 gm ginger 2 tbsp pure ghee 2 tbsp butter Salt to taste ¾ tsp red chilli powder 100 gm mushrooms 100 gm crushed boiled peas 50 gm paneer 2 tbsp oil To make makki ki roti: 500 gm makkai flour 2tbsp oil METHOD Wash and chop the cleaned leaves of all the 3 kinds of saag and radish. Peel off the outer skin of the stems of the sarson leaves and chop stems. Chop 2 onions, a small piece of ginger and green chillis. Put all these together in a pressure cooker and cook for about half an hour. Crush this mixture in a mixie, adding a handful of makkai flour in each lot. Use about 75 gm of makkai flour for the entire mixture. Grind it coarsely. Meanwhile, wash, dry and sauté mushrooms in 1 tsp of butter. Mix crushed peas and paneer and add salt and spices to taste. Fill the mixture in the mushrooms. Chop tomatoes and ginger. Heat ghee in a harahi, add ginger and fry. Now add tomatoes and red chilli powder and fry for some time more. Add this to the saag. Just before serving, heat up the saag, put in stuffed mushrooms, cover and keep on slow fire for 5 minutes. Invert carefully in the serving bowl. Put the butter on top and serve with makki ki roti. To make Makki Ki Roti: Warm water. Make a hard dough with the flour. Keep the griddle on fire. Smoother out a little portion of dough(just sufficient for 1 roti) by kneading with palms using warm water. Keep a polythene sheet on the rolling surface and over it put the dough and cover with another sheet of polythene and roll. You can also use your wet palm and roll the dough directly without covering with another sheet. Carefully put the roti on hot griddly and cook on both sides. You can also shallow fry this in fat.
HEALTH AND NUTRITIONAL BENEFITS A very healthy dish which is very filling and has benefits of fresh tomatoes, leafy vegetables, peas, mushrooms and fat content from paneer, oil, ghee and butter. Corn flour has less amount of fat and is light on the stomach. Chilli and other ingredients add taste to the dish and make it appetizing to eat. Try it out and serve it hot to family and friends as a surprise.
