This is the last variety of recipe which is being provided in this series. As and when I would come to know of some new and different I will provide you the with the recipe. Till then happy pickle making and hope you will enjoy reading the nutritional information given below.
INGREDIENTS(250ml cup)
Cubed mango pieces 1 ¼ cup
Mustard powder 2 tbsp
Red chilli powder 3 tbsp
Salt 1 ½ tsp or as per taste
Oil ( Sesame oil preferred, groundnut oil will do just fine) 3 tbsp
METHOD
The same as making avakaya. But there is a vital difference. The cubes do contain the seed of the mango. Slice the mango into 18 to 24 pieces.
TIPS WHILE MAKING PICKLES
Always keep in mind that mango pieces need to be wiped dry. After you wash the mango and cut in into pieces, wipe it dry with a cloth and let it dry for a while, or the pickle can get spoilt.
After the pickle is made, on the fourth or fifth day, place it into a wide vessel. Mix well with a long ladle that is clean and dry. Also, add more oil so that it covers the entire pickle as it helps preserve it.
The best way to get a long lasting and delicious pickle is to use ingredients which are fresh and clean. Whether it is the mangoes or even the chilli powder or the other ingredients, make sure everything is fresh.
