AAM KI LAUNJ

INGREDIENTS

1 tbsp oil

½ tsp kalonji(nigella seeds)

1 tsp saunf

2 dry red chillies, cut into rough pieces

2 grated or sliced raw mangoes – medium size

1/3 tsp salt

5 tbsp sugar or grated jaggery

METHOD

 

Heat oil in a kadai, and add kalonji, saunf and red chillies. Add the mango and salt. Cover and cook over low heat for 10-12 minutes. When soft, add the sugar or jaggery and cook till it dissolves. Remove from heat and serve lukewarm or cold along with rice or parathas or chapattis. When had with rice or parathas hot the  sweet and tangy taste will be quite different from the pickles and will be fresh as it is prepared and immediately consumed as there is no preservation involved. One more dish to be prepared  with mango.
