It’s been a while since I posted in here; a lot of things has happened. America got their 45th President (Trump), Remembrance day rang through my country painting it red and black signifying the poppies and my graduation from the University of Guyana took place yesterday (Yay me!).

But in those moments my sister came back to visit home and I took up some of my old cravings like pizza.

But I’ve been trying to get on this health food train and my version of pizza is trying to eat healthy but not looking you know…

INGREDENTS

Makes 6 servings

  • 1 tube (13.8 ounces) refrigerated pizza crust
  • 1-1/2 cups cubed cooked chicken breast
  • 1 cup grape tomatoes, halved
  • 1/2 cup sliced fresh mushrooms
  • 1/4 cup sliced ripe olives
  • 1/8 teaspoon garlic salt
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon olive oil
  • 1/3 cup shredded part-skim mozzarella cheese
  • 1/3 cup cheddar cheese
  • 1/3 cup parmesan
  • 1/2 cup cooked kale

Sauce:-

  • 3 pounds of fresh tomatoes, peeled and seeded (to peel, cut a small “x” on the top and drop into boiling water for 10 seconds and drop into an ice bath. Skin will easily peel off)
  • ¼ cup olive oil (or tallow)
  • 3 medium onions, diced
  • 8 cloves of fresh garlic (or more to taste), finely minced
  • 1/3 cup fresh basil leaves, finely chopped
  • 1 sprig of fresh thyme leaves (or ½ tsp dried)
  • 1 sprig of fresh oregano (or 1 teaspoon dried oregano)
  • 2 bay leaves (remove when done)
  • 2 sprigs of parsley (or 1 tsp dried)
  • 1 teaspoon sea salt
  1. Roll out the dough and let it rise. I personally made my dough from scratch but you can us store-bought.
  2. The Italian sauce you can pre-make and store away. you can tweak the recipe to suit your taste.
  3. In a non-stick pan combine the chicken and kale to cook down with some garlic, salt, and pepper.
  4. For the mushrooms saute in the same pan in the chicken juices with onions, garlic, salt, pepper and any other spices that suit your taste ( I used some blended basil, smoked paprika and a touch ginger).
  5. Set the oven at 400 degrees and flash cook the dough alone for 5 Mins; then spread on a thin layer of the Italian sauce on the crust and bake for another 5 Mins till it has baked in the dough.
  6. Now it’s time for the assembly; sauce chicken and kale, onions, cherry tomatoes, 1/2 of the mushrooms, olives and CHEESE!!!
  7. On top of the cheese, you can add the rest of the mushrooms then put in the oven at 350 degrees. Everything is pre-cooked so you’re just melting and giving the chicken and crust some color.
